About the event
Genius Coci. I cuochi custodi dell’artigianato gastronomico ("Tradition and innovation under the sign of artisan value") is an event run by the Accademia dell’Acciuga, centred on Carlo Cambi.
In this new Quaderno, part of the series of notebooks of the Fondazione Germozzi of Confartigianato Imprese, Cambi describes a view of the world in which know-how is not nostalgia but a key to understanding the present. In its pages, Italian food and wine is not an archive of recipes but a living cultural practice, where hands, raw materials and territories meet to create meaning and beauty.
UNESCO's recognition of Italian cuisine as a heritage of humanity marks a decisive historical step. Yet every recognition carries a responsibility: to keep the heritage from turning into a museum, prestige into a label, food into a "commodity" and the restaurateur into a mere supplier of calories.

About Forte dei Marmi
Forte dei Marmi takes its name from the small fort in Piazza Garibaldi, completed in 1788 under Grand Duke Peter Leopold to guard the beach where marble from the Apuan Alps was stored and shipped. The town belonged to Pietrasanta until 26 April 1914, when it became a comune of its own.
